The Best Varieties

Rooted parsley is usually listed in seed catalogs as Hamburg Rooted parsley. Short Sugar and Early Sugar are two improved Hamburg types, recommended for their high sugar content.

Sowing and Growing

Like carrots, rooted parsley tolerates a poor soil if steady moisture is supplied. Don’t plant them in a soil that has been freshly manured or is high in nitrogen. This causes excessive top growth and forked, hairy roots. Simply till the bed to a depth of at least 8 inches, then rake the soil smooth of rocks and clumps.

Because rooted parsley requires a long growing season, about 100 days, I start seedlings indoors in late February or early March. If you live in an area that has mild winters, try planting a fall crop for harvest next spring. Parsley is extremely hardy, and the rooted varieties are no different.

Like parsnips, rooted parsley is slow to germinate. Use fresh seed every year, and soak the seed overnight in tepid water to promote sprouting. I plant the seeds in peat pellets, then place the pellets in a sunny windowsill until seedlings appear, up to a month later. Germination is best at 55° to 65° F. When temperatures out doors are above 45° F, I move the seedlings into their bed, spaced 4 inches apart. Mulch the bed with clean straw, and water the bed often to keep the plants healthy.
